Ingredients
- 1 pound of large prawns, peeled and deveined
- 2 tablespoons of blackening seasoning (such as Cajun or Creole)
- Olive oil for cooking
- 1 ripe mango, diced
- ¼ cup of red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- A handful of fresh coriander leaves, chopped
- Juice from one lime
- Tortillas (corn or flour), warmed
- Avocado slices
- Lime wedges
Method
- Blackened Prawns: Preheat your oven to 425°F (220°C). In a small bowl, combine the blackening seasoning of your choice with salt and pepper. Pat dry the prawns using paper towels and place them in a large mixing bowl. Sprinkle the blackening seasoning mixture over the prawns, ensuring they are evenly coated on all sides. Heat a frying pan or grill pan over medium-high heat until hot. Add olive oil to coat the bottom of the pan lightly. Cook each side of seasoned prawns for about 2-3 minutes per side until they turn pinkish-orange colour.
- Mango Salsa: Peel and dice one ripe mango into small cubes. Finely chop half red onion. Deseed jalapeno if desired then finely chop it as well. Chop fresh coriander leaves roughly. In another mixing bowl add diced mangoes, chopped onions, jalapenos, coriander along with lime juice. Mix everything together gently so that flavours blend nicely.
- Greek Yoghurt Chipotle Sauce: Take Greek yoghurt in separate container. Add chipotle sauce according to taste preference. Add some freshly squeezed lemon juice too. Give this mix a good stir until it’s smooth.
- Assembly: To assemble Blackened Prawn Tacos: Take tortillas/wraps/soft shells you prefer. Place a few cooked prawns onto the centre, topped up generously by Mango salsa. Then drizzle Greek yoghurt-chipotle sauce. Serve immediately.
- Tips/Variations: If you like spicier tacos, feel free to increase or decrease spice levels by adjusting the amount of chilli powder or adding additional spices such as cayenne pepper or paprika. For added freshness, squeeze extra lime juice over assembled tacos before serving. Customise toppings based on personal preferences; options include sliced avocado, shredded lettuce, or diced tomatoes. For a vegetarian version of these tacos, substitute the prawns with blackened tofu or grilled vegetables like peppers and courgette. Enjoy your delicious Blackened Prawn Tacos with Mango Salsa!

Storage and Leftovers
When it comes to enjoying Blackened Prawn Tacos with Mango Salsa, you may find yourself lucky enough to have some leftovers. To ensure that your delicious creations stay fresh for as long as possible, proper storage is key.
To store any leftover blackened prawns, mango salsa, or sauces in the refrigerator:
- Allow the components of your tacos to cool down completely before storing them.
- Transfer each component into separate airtight containers or resealable bags.
- Label each container with its contents and date of preparation for easy identification later on.
It’s important to note that while these leftovers can be stored separately in the refrigerator for up to three days without compromising their quality and taste, we recommend consuming them within this timeframe for optimal freshness.
Whether you plan on reheating your blackened prawns or using them cold in another dish like salads or wraps – they are incredibly versatile! The vibrant flavours of the mango salsa will still shine through even after being refrigerated overnight.
If by chance there are no leftovers (which wouldn’t come as a surprise), consider making an extra batch next time so you can enjoy these mouthwatering tacos again throughout the week!
Remember always; safety first when handling food items – discard anything if it shows signs of spoilage such as off smells or unusual textures.
